Why Every Mom Should Own an Instant Pot: Recipe Included

Anyone who doesn’t know that the Instant Pot is a busy mom’s best friend obviously doesn’t own one. I’m the PERFECT example of someone who didn’t know she needed an Instant Pot (or two) until I broke down and bought one last fall. I have a full time job, a 5 year old, and a side hustle. I now also have two Instant Pots that I’ve affectionately named (and labeled) 2 Pot and The Notorious P.O.T. (much to my friends’ delight and my husband’s chagrin).

These simple household appliances have completely changed the way I cook for my family. I can prepare chicken from frozen and whip up soup or stew in a matter of minutes. Grandma’s Sunday sauce no longer has to simmer all day. Instead, it can be prepared long after church and grocery shopping are through. Seriously, these little gems are game changers in the kitchen. 

I’m not alone in my Instant Pot Obsession. Even the Pioneer Woman herself, Ree Drummond has jumped on the Instant Pot bandwagon. She is now selling her own line of affordable Instant Pots at Walmart stores across the nation. If that’s not enough to persuade you moms out there who haven’t yet purchased this handy kitchen appliance, maybe my “almost famous” turkey meatball recipe will be!

Turkey Meatballs
These turkey meatballs were made in the Instant Pot. No browning required!

Ingredients
  1. olive oil
  2. 1/2 small white onion, diced
  3. 1 pound ground turkey
  4. 1 egg
  5. 1/4 cup whole wheat bread crumbs
  6. 2 tablespoons parmesan cheese
  7. salt, pepper, garlic powder to taste
  8. your favorite jarred (no sugar added) tomato sauce
Instructions
  1. Heat a tablespoon of olive oil in a skillet (or use the sauté function and cook directly in the Instant pot)
  2. Sauté the diced onion in the olive oil
  3. Season with salt, pepper and garlic powder
  4. Continue cooking until onions are translucent
  5. Set aside to cool
  6. In a large bowl, mix ground turkey, egg, bread crumbs, and parmesan
  7. Season with more salt and garlic powder to taste
  8. Add cooled onions and mix
  9. Form balls about 1.5 inches in diameter
  10. Add 1/2 cup water and jar of sauce to the bottom of your instant pot (putting the water in first will prevent burning)
  11. Add the raw meatballs to the pot
  12. Place lid on Instant Pot and be sure the vent is shut
  13. Set the Instant Pot on high for 10 minutes
  14. After the meatballs are done cooking, let the Instant Pot naturally release for at least five minutes
  15. Manually release the rest of the pressure, and serve meatballs and sauce with your favorite pasta or zoodles.
