2 Easy Family Friendly Recipes To Try This Weekend

Cooking is so fun, it’s satisfying sitting down and eating something delicious you made.  I love cooking but with my busy schedule it’s hard to enjoy cooking since I’m trying to accomplish a million things at the same time.  I’m sure a lot of people can familiarize with the feeling.  We want a delicious home cooked meal but don’t have the time to do it.  This inspired me to start creating meals that can be done fast with little work that my family will love.  I’m sharing two of our favorite recipes that are very easy to make.  The main equipment required is a crockpot and tupperware containers for storage afterwards.

The first recipe is a favorite of my little taste tester.  Every time I make it she responds with, “Mmm, delicious”, in her little voice.  It is easy to prepare with less than 10 ingredients needed.  It’s called BBQ Pulled Chicken. Here’s the ingredients and directions below.

BBQ Pulled Chicken Crockpot Style

Ingredients

2 lbs of boneless skinless chicken breast

2 cups of barbeque sauce

1/3 cup brown sugar

1 cup of water

½ onion

Salt, Pepper, to taste

Buns

Directions

Spray crock pot with non stick spray.  Pour in BBQ sauce, water and brown sugar, stir.  Season chicken with salt and pepper, put in crockpot.  Chop onions and add to crockpot, stir. Cover and turn crockpot on HIGH and in 4 hours or when finished use a fork to shred chicken.  You can dice carrots as well to add a veggie no one will notice.  Paired with sides of your choice this is a great dinner to make that doesn’t require a lot of hands on time.  Just put it in the crockpot and go! I love putting it in the night before or before I go to work that morning.

The next recipe requires a crockpot as well.  The crockpot is one of my favorite things to cook with because I can cook and do other things at the same time.  Of course you won’t always use your crockpot to make an easy meal, however it comes in handy on those busy days when you know time is restricted.  Here’s the next recipe which is another favorite in our house because it is tasty with meat and veggies in one dish. It’s called, Lemon Pepper Crockpot Chicken.

Lemon Pepper Crockpot Chicken

Ingredients

2 lbs of boneless skinless chicken breast

1 Cup chicken stock or water

4 potatoes

4 carrots

Half an onion

1  Lemon

Seasonings – Sea salt, butter, Italian seasoning, pepper- all to taste

Directions

Spray crockpot with nonstick spray. Season chicken in crockpot.  Chop up veggies and season those as well, you won’t need as much seasoning as you used for the chicken.  Put vegetables in crockpot and toss around with chicken. Add chicken stock.  Cut up lemon and squeeze juice over everything and place slices of lemons as you like in crockpot. 

Cover and turn crockpot on HIGH and will have juicy chicken that falls apart in about 4 hours.  Throw away lemon slices.  Serve with a pasta or side of choice for a hearty meal everyone will love.
