Decadent potato soup from scratch, in less time than you think to make it. No pressure cooker required.

Ingredients
- 4-6 Medium Potatoes (any kind you like)
- 1 Large Ham Steak (or 1lb of diced cured ham, not processed food)
- 1 Medium Yellow Onion
- 2 TBSP Minced Garlic
- 2 cups Diced Celery
- 2 cups Diced Carrots
- 4 TBSP Butter (half a stick)
- 1/3 cup Flour
- 4 cups Chicken Stock
- 3 cups Water
- 2/3 cup Heavy Whipping Cream
- Salt
- Black Pepper
Instructions
- Prep all ingredients as listed.
- In a large stock pot, melt the butter over medium heat.
- Add garlic, onion, celery and carrots. Mix well. Allow to saute until onions are limp (about 5 minutes)
- Sprinkle flour into mixture and mix well. (will resemble a chunky dough)
- Add 1 cup of water and mix will. Repeat until all water is mixed.
- Add 1 cup of chicken stock and mix well. Repeat until all broth is mixed.
- Add ham. Bring mixture to a boil.
- Reduce heat, cover and simmer for 20 minutes.
- Add potatoes, cover and allow to simmer for 30 minutes.
- When potatoes start to crumble, remove from heat.
- Add cream, stir well. Add salt and pepper to taste.
- *if broth is too thin for your taste, allow to simmer 15 additional minutes uncovered, stirring occasionally to prevent sticking.
Notes
- Top it off: Add flavor with a dollop of sour cream, or a sprinkle of shredded cheddar cheese.
- Vegetarian Version: omit ham, replace chicken stock with vegetable stock. Replace butter with EVOO. Omit Cream, mash potatoes within the soup to thicken the broth.
- Spice it up... kick up the flavor with cayenne pepper, green onion or chives.
