Ingredients
  1. 4-6 Medium Potatoes (any kind you like)
  2. 1 Large Ham Steak (or 1lb of diced cured ham, not processed food)
  3. 1 Medium Yellow Onion
  4. 2 TBSP Minced Garlic
  5. 2 cups Diced Celery
  6. 2 cups Diced Carrots
  7. 4 TBSP Butter (half a stick)
  8. 1/3 cup Flour
  9. 4 cups Chicken Stock
  10. 3 cups Water
  11. 2/3 cup Heavy Whipping Cream
  12. Salt
  13. Black Pepper
Instructions
  1. Prep all ingredients as listed.
  2. In a large stock pot, melt the butter over medium heat.
  3. Add garlic, onion, celery and carrots. Mix well. Allow to saute until onions are limp (about 5 minutes)
  4. Sprinkle flour into mixture and mix well. (will resemble a chunky dough)
  5. Add 1 cup of water and mix will. Repeat until all water is mixed.
  6. Add 1 cup of chicken stock and mix well. Repeat until all broth is mixed.
  7. Add ham. Bring mixture to a boil.
  8. Reduce heat, cover and simmer for 20 minutes.
  9. Add potatoes, cover and allow to simmer for 30 minutes.
  10. When potatoes start to crumble, remove from heat.
  11. Add cream, stir well. Add salt and pepper to taste.
  12. *if broth is too thin for your taste, allow to simmer 15 additional minutes uncovered, stirring occasionally to prevent sticking.
Notes
  1. Top it off: Add flavor with a dollop of sour cream, or a sprinkle of shredded cheddar cheese.
  2. Vegetarian Version: omit ham, replace chicken stock with vegetable stock. Replace butter with EVOO. Omit Cream, mash potatoes within the soup to thicken the broth.
  3. Spice it up... kick up the flavor with cayenne pepper, green onion or chives.
