Chocolate Pumpkin Bread

A breakfast treat that is both mom and kid-approved!
Prep Time

Ingredients
- 2 C white whole wheat Flour (or other flour)
- 1 tsp baking soda
- 3/4 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ginger
- 2 ripe bananas, mashed*
- 1/2 C canned pumpkin (only ingredient is pumpkin)
- 1/2 C 100% pure maple syrup
- 1/3 C melted coconut oil (or other oil)
- 1 tsp pure vanilla extract
- 3/4 C chocolate chips, divided
Instructions
- Preheat oven to 350.
- Grease loaf pan and set aside.
- Combine and mix all dry ingredients in a large mixing bowl.
- In a separate bowl, combine and mix all wet ingredients.
- Pour wet into dry and combine to form batter.
- Fold in 1/2 C chocolate chips to batter.
- Smooth batter into prepared pan. Press remaining chocolate chips into the top.
- Bake for 30-40 minutes until fork comes out clean.
- Cool and enjoy!
Notes
- *If bananas aren't an option, the bread also tastes great with dates as an alternative sweet fruit. Sub 1 C chopped dates, soaked in water for 5-10 mins for bananas.
