Pumpkin Pie Bites (with chocolate chip option!)

Pumpkin pie bites that are healthy and good for you? Yes please! And option to add in a little chocolate? I'm sold!

Ingredients
  1. 1 cup pitted dates
  2. 1/2 cup raw almonds
  3. 1/2 cup canned pumpkin puree (make sure the only ingredient is pumpkin)
  4. 1/2 cup unsweetened coconut flakes (reserve a small amount for garnishing)
  5. 2 tsp pure maple syrup
  6. 2 tsp pumpkin pie spice
  7. pinch sea salt (or Himalayan salt)
  8. optional: mini chocolate chips or dark chocolate/cacao bits
Instructions
  1. 1. Place dates in a bowl and cover with water. Let soak for 10 minutes.
  2. 2. Place almonds in food processor, pulse until finely ground.
  3. 3. Drain water and add dates, pumpkin, coconut, syrup, and spices to food processor. Pulse until well mixed. Place in bowl, add chocolate chips, if desired, and mix together. Cover bowl and refrigerate for 30 minutes.
  4. 4. With clean hands, roll mixture into tablespoon-sized balls. Roll balls in reserved coconut.
  5. 5. Store in airtight container in the refrigerator.
  6. Enjoy!
Notes
  1. Alternate ideas: roll pumpkin pie mixture in crushed almonds, graham cracker crumbs, or even dip in melted chocolate!
