This BLT recipe is so easy and seemingly healthy that you’ll want to make it tonight! All you need is 20 minutes and a few pantry staples.
My favorite part is that most of the produce can be swapped for different ingredients. No lettuce? Use fresh spinach. No avocado? Switch it for corn. Visit your local farmer’s market to make this summer recipe your own–and then maybe share it with your family.
Yummy BLT Summer Salad
A fresh twist on a summer classic
Total Time: 20 minutes
Serves: 4
Ingredients
For the salad:
4 cups lettuce mix
1 cup chopped cherry tomatoes
1 chopped avocado
1/2 cup shredded cheddar cheese
8 strips of bacon
2 cups uncooked Farfalle pasta
For the dressing:
Equal parts mayo and BBQ sauce
A squeeze of lemon juice
Pepper to taste
Directions
Fill a large salad bowl with lettuce, tomatoes, avocado, and cheese.
Cook bacon and tear it into bite-sized pieces; add to bowl. {I microwave it to save on time and clean up!}
Cook pasta to package instructions. Then drain and run under cold water; add to bowl.
Mix dressing ingredients in a small bowl; add desired amount to salad.
Toss to combine.
